History of the label: In 2017 my two daughters got married. They asked me to make a good sparkling wine for their marriages. In this time I had a fermenting must of Xinomavro. So I put into some bottles a little bit of the must and the rest I filled it with Nimbus Albus of the last year. And so this is how this wine begun its journey…
Tasting notes:
The wine is, unsurprisingly, lively and brisk with fresh citrus, red fruit, and the snap of cool watermelon to the nose. To the mouth the tastes of strawberry and yeast are predominant. The crown cap holds in the fizz.

Winemaking report:
After halting primary fermentation, we brought the wine down to a very cool temperature and let it settle off of its primary lees. The next year we add fermented must of Xinomavro to the wine in bottle provides the sparkle and lees-y feel as it gets turned into alcohol and CO2, and not disgorging makes it hazy, creating broader palate weight, pleasing textures, and balance throughout. This special bottling is done entirely by hand. After the bottling we do remontage for 3 weeks. No fining, no protein or tartaric stabilization, no filtration, no sulfites added.
Aging potential:
Aging potential up to 2 years. This special wine should be opened and enjoyed cold.
Ideal serving temperature between 4-6ο C.
